Ingredients
- 2 cups flour
- 1 cup sugar (or decrease to 1/2 cup sugar)
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon baking soda
- 3/4 cup orange juice, freshly squeezed (if possible)
- 2 tablespoons shortening
- 1 egg, well beaten
- 1 1/2 cup fresh cranberries
- 1 cup chopped walnuts

Step 1
1. Preheat oven to 350 degrees. Mix dry ingredients in a bowl. Stir in OJ, shortening and egg. Mix until well blended. Stir in cranberries and nuts. Turn into greased and lightly floured 9X5 load pan. Bake 55 minutes or until a tooth pick comes out clean. Cool on rack 15 minutes and remove from pan. Allow to cool.
I find that it take at least 60 - 70 minutes to get a clean toothpick. If using small load pans, start checking at about 45 minutes.
