Ingredients
- 2 chicken halves, or 2 spatchcocked game hens
- 1 -2 tablespoons Calabrian crushed chilies
- 2 tbsp rosemary leaves
- 2 tsp orange zest
- 2 tbsp orange juice
- 1 anchovy filet
- 1 cup white wine (or plain) vinegar
- 1/2 cup vegetable oil
- 4 cloves garlic
- 1 egg
- 2 1/2 teaspoons kosher salt (or 1 1/4 tsp fine salt)

Step 1
Blend all ingredients, except chicken, until a smooth paste.
Put the chicken or game hens in a ziplock bag with the marinade, and refrigerate at least 8 hrs, or overnight.
Dry off the chicken with paper towels, reserving the marinade.
Salt the chicken.
Cook on a hot grill, skin side down, for about 5 minutes. Turn over, brush with the marinade and cook for about 30 minutes, brushing with the marinade every 5 minutes or so. Flip over again, brush the back side and cook another 5 minutes.
Let rest for 5 - 10 minutes.
Serve with extra chili sauce on the side.
