Spanish Green Peppers

This is a very easy dish to make with lots of flavour and low in fat and calories

Ingredients

  • 1 lb lean ground chicken or turkey
  • 1 cup cooked quinoa
  • 1 small onion diced
  • 1/2 can chopped green olives
  • 1 can of Ro*tel diced tomatoes and green chili
  • shredded cheese for the top

Preparation

Step 1

1. Preheat oven to 375

2. Cut tops and clean out 4 green peppers

3. Cook ground chicken until almost done then add onion, green olives and can of Ro*tel. Let simmer for about 10 minutes. Add cooked quinoa and mix well.

4. Transfer mixture to the 4 green peppers.

5. Place peppers in casserole dish with about 1 inch of water in the bottom

6. Sprinkle cheese over top

7. Cook in oven for approximately 40 minutes.
