Pistachio Cherry Sandwiches

Ingredients

  • 2 sticks unsalted butter, room temperature , cut into small pieces
  • 1/2 cup sugar
  • 2 tbs honey
  • 1 large egg yolk
  • 1 tsp vanilla
  • 1 3/4 cups flour
  • 1 cup blanched and peeled pistachios( about 4 oz)
  • 1/2 About 1/2 cup sour cherry preserves

Preparation

Step 1

1. Pulse butter, sugar, honey, egg yolk and vanilla in a food processor until creamy, scraping down the processor as needed. Add flour and pistachios and pulse till dough comes together about 4-5 pulses
2.transfer dough to a sheet of parchment paper and knead til uniformed. Divide dough in half. Roll each half into a compact log about one inch in diameter. wrap the logs individually in plastic wrap and freeze till firm, at least 30 minutes and up to 3 weeks
3.preheat oven to 325. Line cookie sheets with parchment paper. Slice the logs into 1/4" rounds and place them on cookie sheets about 1 1/2" apart
Bake until the cookies are firm and lightly browned 12-15 minutes. Let cool on cookie sheets for 2 minutes, then transfer to wire rack to cool completely
4.Spoon about 1/4 tsp of cherry preserves on the underside of half the cookies then sandwich with remaining cookies
5. Store in a airtight container with waxed paper between layers
