Cafe Soleil's Summer Peach Cobbler

Ingredients

  • 8 cups peeled and sliced ripe peaches
  • 1/4 cup brown sugar
  • 1 tsp. cinnamon
  • 1/2 tsp. nutmeg
  • 1 1/2 cups unbleached all purpose flour
  • 1 1/2 cups granulated sugar
  • 1 tbsp. baking powder
  • 1 stick (1/4 lb.) sweet butter
  • 1 1/2 cups milk

Preparation

Step 1

Preheat oven to 350 degrees. Butter a three quart baking dish. Mix peaches, brown sugar, cinnamon and nutmeg. Pour into baking dish. Mix flour, granulated sugar, and baking powder in a mixing bowl. Cut in butter until mixture resembles cornmeal. Add milk and stir batter vigorously for 2 minutes. Pour into baking dish over the peaches and spread evenly. Place on center rack of oven and bake for 45-50 minutes. Serve warm with French vanilla ice cream or whipped cream
