RED CABBAGE BRAISED WITH VINEGAR AND BACON

Ingredients

  • 1 lb. bacon cut into 1 in. pieces
  • 2 c. chopped onion
  • 1 head of red cabbage (about 3 lbs.) cored & finely slivered
  • 3 granny smith apples, cored & cut into 1 in. pieces
  • 3/4 c. dry red wine
  • 3/4 c. red wine vinegar
  • 3 tbs. dark brown sugaar
  • 2 tsp. caraway seeds
  • 1 tsp. dried thyme leaves
  • 1/2 tsp. black pepper

Preparation

Step 1

Cook bacon in a large deep skillet or dutch oven over low heat for 15 min. Add the onions & cook until wilted, 10 min. Add the remaining ingredients & toss well. Cover the skillet & cook over medium heat for 1 1/4 hrs. stirring occasionally. If necessary, add a bit more liquid.
