Artichoke Tomato Salad

Ingredients
- 5 large tomatoes, about 2 lbs..cut into wedges
- 1/4 tsp salt
- 1/4 tsp pepper
- 1 can of artichoke hearts or bottoms, quartered
- 1 can of black olives, drained and sliced
- 2 T minced parsley
- 2 T white wine vinegar
- 2 garlic cloves, minced
Preparation
Step 1
Put tomatoes in a bowl and sprinkle with salt and pepper. In a small bowl, combine the remaining ingredients. Spoon the dressing over the tomatoes. Refrigerate leftovers.
