Artichoke Tomato Salad

Ingredients

  • 5 large tomatoes, about 2 lbs..cut into wedges
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 1 can of artichoke hearts or bottoms, quartered
  • 1 can of black olives, drained and sliced
  • 2 T minced parsley
  • 2 T white wine vinegar
  • 2 garlic cloves, minced

Preparation

Step 1

Put tomatoes in a bowl and sprinkle with salt and pepper. In a small bowl, combine the remaining ingredients. Spoon the dressing over the tomatoes. Refrigerate leftovers.
