La Madeleine’s Original Tomato Basil Soup

Ingredients

  • 4 cups (8-10) tomatoes, peeler, cored and chopped, OR 4 cups canned whole tomatoes crushed
  • 4 cups tomatoe juice OR part tomato juice and part vegetable or chicken stock
  • 12-14 fresh basil leaves, washed
  • 1 cup heavy cream
  • 1/4 pound (1 stick) unsalted butter
  • salt to taste
  • 1/4 teaspoon cracked black pepper

Preparation

Step 1

Combine tomatoes with juice (or juice and stock) in saucepan. Simmer 30 minutes. In blender or food processors, puree mixture, adding basil leaves in small batches.
Return to saucepan. Over low heat stir in cream and butter. Add salt and pepper. Garnish with basil leaves and serve with your favorite bread.
