Bananas Royale

Ingredients

  • 4 bananas (medium peeled)
  • 1/3 cup margarine or butter
  • 1/3 cup brown sugar
  • 1/4 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/4 cup light cream
  • 1/4 cup brandy
  • 4 cups vanilla ice cream (1 qt)

Preparation

Step 1

Slice bananas in half crosswise, then lengthwise. In chafing dish (or skillet), melt margarine. Stir in brown sugar, cinnamon and nutmeg. Add bananas; cook 3 minutes over low heat. Bananas should be slightly firm. (Do not overcook) Stir in cream, cooking until thickened, about 2 minutes. Just before serving, heat brandy in small saucepan or ladle until vapors begin to rise. Ignite and quickly pour over bananas in chafing dish. Serve flaming over ice cream. Serves 8.
