Grilled Corn and Smoked Chicken Soup

Ingredients

  • 8 cups chicken stock
  • 6 tablespoons apple-smoked bacon, diced 1/8”
  • 3/4 cup smoked chicken breast, diced 1/4”
  • 3/4 cup grilled corn (approx. 3 ears)
  • 3/4 cup red onion, finely chopped
  • 1/2 cup cilantro leaves
  • 1/2 cup roma tomatoes, peeled, seeded and diced 1/4”
  • 2 jalapenos, diced with seeds
  • 6 wedges of lime
  • 1 ripe avocado, cut into 6 wedges
  • 1 1/2 cups tortilla strips 1/8”, fried crisp
  • 1 1/2 cups sour cream

Preparation

Step 1

Bring chicken stock to a boil and reduce to a simmer. Cut corn off the cobs and add cobs only to chicken stock. Cook for 10 minutes and remove. Brown bacon until crisp. Add bacon, chicken, red onion, tomato, corn, and jalapenos to chicken stock. Cook for 5 minutes then add cilantro. Divide the tortilla strips equally among the serving bowls. Place a wedge of lime and avocado in each bowl, ladle soup. Serve wit sour cream on the side.
