Spinach Beef Biscuit Bake

Ingredients

  • 15 oz of refriderated buttermilk biscuit
  • 1.5 #'s ground beef
  • 1/2 C chopped onion
  • 2 eggs
  • 1 pkg chopped frozen spinach, thawed & squeezed dry
  • 4 oz mushroom, drained
  • 4 oz shredded monterey jack
  • 1/4 C parmesan cheese
  • 1.5 tsp garlic powder
  • S & P to taste
  • 1 to 2 T melted butter or margarine

Preparation

Step 1

Press & flatten biscuits onto the bottom & up the sides of a greased 11 x 7 x 2 baking dish; set aside. In a skillet over medium heat, cook beef & onion until meat no longer pink, drain. In a bowl, beat eggs. Add spinach & mushrooms; mix well. Stir in the cheeses, garlic, salt & pepper & beef mixture; mix well. Spoon into prepared crust. Drizzle with butter. Bake, uncovered, at 375 for 25 to 30 minutes or until crust is lightly browned.
