Ingredients

  • 8 eggs
  • 1/2 cup all purpose flour
  • 1 teaspoon baking powder
  • 3/4 teaspoon salt
  • 3 cups (12 oz) shredded Monterey Jack cheese
  • 1 1/2 cups (12 oz) cottage cheese
  • 2 four oz cans diced chilis

Step 1

In large mixing bowl, beat eggs with electric mixer until light (4-5 minutes). Stir together flour, baking powder, and salt; add to eggs and mix well. Fold in jack cheese, cottage cheese, and chilis. Turn into greased 9x9x2 inch baking dish. Bake in 350 degree oven for 40 minutes or until a knife comes out clean. Don't overcook. Remove from oven and let stand 10 miuntes. Cut into small squares for appetizers or larger squares for a main course. Serve with warmed salsa. This recipe doubles well, allowing more cooking time.
