Vicki's Chicken Tortilla Soup

Ingredients

  • 4 lbs. Chicken Breast with bones-- seasoned with garlic
  • 2 onions chopped
  • 3 celery stalks, chopped
  • 2 yellow squash, chopped
  • 2 Zucchini, chopped
  • 6 Baby carrots chopped
  • 1 package Williams chili seasoning
  • 2 cans rotel tomatoes (or 3)
  • 1 can chopped green chilis
  • 2 cans jalapeno pinto beans
  • 1 package frozen shoepeg corn
  • 1 can black beans
  • 1 can or frozen package of French style green beans
  • Cilantro
  • Tostados

Preparation

Step 1

Boil chicken on top of stove. When doe let cool. Discard skin and bones, cut up chicken and add next 5 ingredients. Cook until done, then add Williams chili seasoning. Add remaining ingredients and cook until heated through. Garnish with tostados and cilantro or pico di gallo on top.
