CORNISH HENS

Peggy Farr gave me this recipe. I made it for Toby and myself, BC (before children). Peggy lived in Banbury Cross and took my place while I was on maternity leave with Jason - her son helped potty train Jason by telling him he could only ride his motorcycle when he no longer wore diapers... did the trick and Jason got his ride on Donald's "co-coy" about 2 weeks after Donald told Jason that. Peggy babysat Jason a few times too.

Ingredients

  • 2 Cornish hens
  • 1/4 stick butter
  • 8 slices of bread, cubed
  • 1 small onion, diced
  • 1 stalk celery, diced
  • poultry seasoning, to taste
  • GRAVY: 1 heaping TBS flour, 1/2 cup cold water or milk

Preparation

Step 1

Melt butter in pan. Add chopped onion, celery and saute'. Add to bread cubes. Season with poultry seasoning. Separate the bread mixture and stuff the hens. Bake at 350F for 1-1/2 hours, covered. Uncover for the last 15 minutes. Cool while making gravy.

GRAVY: Mix 1 heaping Tablespoon of flour to 1/2 cup cold water or milk. Stir until creamy. Add slowly to drippings (the liquid in the roasting pan that the hens were baked in) and stir over medium heat until thick.
