Howie's Best Italian Nachos

Italian American Nachos. Great party food! An Italian - Mexican - Asian fusion dish!

Ingredients
- 20 wonton wrappers
- olive oil
- 2 egg whites, frothed
- 1 teaspoon oregano
- 1/2 lb Italian sausage, cooked and crumbled
- 1/2 cup chopped roma tomato
- 1/4 cup sliced green onion
- 8 ounces sliced ripe black olives
- 2 tablespoons pickled pepperoncini peppers
- 1 cup shredded mozzarella cheese
- 1/4 teaspoon red pepper flakes
Preparation
Step 1
Brown the Italian sausage and drain fat. Crumble the sausage if it is in casing.
Brush 2 cookie sheets with a layer of olive oil.
Place wonton wrappers triangles as single layer on cookie sheets.
Brush wonton wrappers with olive oil. They should be almost completely wet, but with a little bit of white dough and flour still showing.
Brush with egg white and sprinkle with oregano.
Bake at 400ºF for 6 minutes or until golden brown. Watch them! They should raise and brown but not burn!
Cool the chips quickly. Use a cooling fridge if available. If you are in Canada, as I am, stick them outside in the Winter.
Use a spatula to lift off the cooked wrappers. Break into triangles. These are your homemade 'Nacho Chips'.
On a platter layer the nacho chips and sausage. Save extra Chips in a bowl for dipping
Top with tomato, green onions, olives and pepperoncinis.
Finish with shredded cheese and red pepper flakes.
Place in warm oven for approximately 5 minutes to melt cheese.
Serve with side sour cream.
