Sweet potatoes with roasted pepper stuffing

Ingredients
- 2 Large Sweet Potatoes
- 4 oz. Reduced fat cream cheese
- 1/2 cup roasted chopped red sweet peppers
- 4 tsp. balsamic vinegar
- 2 tsp. soy sauce
- 1/2 tsp garlic powder
- 1/4 tsp black pepper
- snipped fresh chives
- light sour cream

Preparation
Step 1
Preheat broiler
Scrub sweet potatoes and prick several times with fork
Cut potatoes in halves and place cut side down in microwavable shallow baking dish
Add 2 tablespoons water, cover with vented plastic wrap and microwave 8 to 10 minutes
Scoop pulp out of potatoes and mash
Add cream cheese, peppers , vinegar, soy sauce, garlic powder, and pepper. Beat smooth
add milk if needed
Spoon mixture into potato shells, and broil 4-6 minutes until browned
Top with chives and sour cream
