Ingredients

  • tablespoons unsalted butter:
  • 1 teaspoon grated nutmeg
  • 1 1/2 teaspoons minced garlic
  • 2 tablespoons chopped sage
  • 2 (1-Pound)pork tenderloins
  • Kosher salt, ground black pepper
  • 1 small butternut squash, peeled
  • and cut into 1-inch pieces
  • 2 cooking apples,peeled and cut
  • into 1/2"-inch pieces
  • 1 medium red onion, cut into
  • 1/2 " pieces
  • 1 tablespoon honey mustard
  • 1 sprig rosemary
  • cut into pieces '

Step 1

1. Preheat oven to 425. Mix nutmeg,
1 teaspoon garlic and sage in bowl.
Rub over pork, add salt and pepper.
2. Toss squash, apples, onion remaining
garlic, honey mustard and
salt and pepper in bowl. Spread on
sheet of foil on baking sheet. Add
rosemary, 3 tablespoons butter.
Bring ends of foil together, crimp to
seal; poke holes in packet. Roast on
upper rack until tender, 30 minutes.
3. Heat skillet over medium-high
heat. Add 2 tablespoons butter, then
brown pork on all sides. Add 2 tablespoons
water, scrape browned bits
from pan; transfer skillet to lower
rack and roast until a thermometer
reaches 150 degrees. Transfer meat
to cutting board; let rest 5 minutes.
4. Return skillet to medium. Add 1/2
cup water, scrape bits and simmer 2
minutes. Slice pork, drizzle with pan
juices.
Serve with squash, apples.
