Frangipan (almond cake)

  • 1 7oz box Odense Almond paste
  • 1/2 granulated sugar
  • 1 stick butter, room temp
  • 3 eggs, room temp
  • 1/2 c cake flour



Step 1

Put rack middle of oven. Heat to 350*.
Grease and flour 10" tart baking pan.
Grate almond paste.
In mixing bowl, put grated almond paste, sugar and butter. With mixer on low, blend well(abt 2 minutes).
Break eggs into small bowl. Beat a few times with fork just to break yolks.
With mixer on low, slowly add eggs. Whisk on high until fluffy abut 3 min.
By hand, sift in cake flour. Gently fold in the flour until just blended.
Spread cake batter evenly into pan.
Bake 30 min or until golden and toothpick comes out clean.
