Pecan Pilaf

Ingredients

  • 1/4 cup butter, divided
  • 1/2 cup chopped pecans
  • 1/4 cup chopped onion
  • 1 cup uncooked long grain rice
  • 2 cups chicken stock
  • 1/2 tsp salt
  • 1/8 tsp dried thyme
  • 1/8 tsp pepper

Preparation

Step 1

Melt 1 1/2 Tbsp butter in a large skillet over medium heat. Add pecans; saute 8 minutes or until lightly browned. Remove pecans from skillet. Melt remaining 2 1/2 Tbsp butter in skillet over medium heat; add onions, and cook until tender, stirring occasionally. Stir in rice and remaining ingredients. Bring mixture to a boil; cover, reduce heat, and simmer 20 minutes until liquid is absorbed and rice is tender. Remove from heat; stir in pecans.
