Dessert Pie: Milk Tart

Ingredients
- Crust:
- 2 cups flour
- 1 egg
- 1/2 cup sugar
- 2 tsp. baking powder
- 9 tbsp. butter
- pinch of salt
- Filling:
- 1 1/2 tsp. butter
- 1/4 tsp. salt
- 1 stick cinnamon
- 3 1/8 cups boiling milk
- 2 tsp. custard powder
- 3 tsp. cornstarch
- 3 tsp. cake flour
- 5 tsp. cold milk
- 1/2 cup white sugar
- 4 large eggs, separated
- 1/2 tsp vanilla
- cinnamon sugar (1 tsp. cinnamon to 4.5 tbsp. sugar)
Preparation
Step 1
Crust:
Cream butter and sugar well together and add the egg, before beating well. Add all other ingredients, making a stiff dough. Press into two pie plates and bake at 350 degrees until light brown (12 minutes).
Filling:
Add butter, salt and cinnamon to boiling milk. Mix the custard powder, cornstarch and flour to a paste with the cold milk. Stir in a little of the hot milk mixture. Stir the custard mixture into the hot milk, add 3 tbsp and 1 tsp sugar and bring to a boil, stirring constantly. Remove from stove when it has thickened and discard the cinnamon stick.
Beat the egg whites until stiff but not dry. Gradually beat in the remaining sugar. Beat the egg yolks lightly and stir in a little of the custard mixture. Stir the yolks into the custard mixture then add vanilla. Gradually fold in the egg whites. Pour the mixture into the pie plates and bake at 395 degrees for 10 minutes. Lower temperature to 350 degrees and bake for another 10-15 minutes or until the filling has set. Cool slightly and sprinkle with cinnamon sugar.
