Ingredients

  • Lemon Grass Red Bell Pepper Salad:
  • 3 red bell peppers, roasted and thinly sliced
  • 3 tablespoons minced lemon grass
  • 1 1/2 tablespoons sherry vinegar
  • 3/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 4 sole fillets, about 4 ounces each
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon freshly ground black pepper
  • 1 tablespoon extra virgin olive oil

Preparation

Step 1

1. In a medium bowl combine all ingredients for lemon grass bell pepper salad and mix well. Set aside.
2. Season fish with salt and pepper. Sauté in a large sauté pan in olive oil about 3 to 5 minutes on each side or until cooked through. Serve 1 fish fillet with 1/3 cup lemon grass red bell pepper salad.
