SMOKED SAUSAGE SAUTE with LEMON HERB VEGETABLES and PASTA

Ingredients

  • 1 pkg. (8 oz.) spaghetti
  • 2 tablespoons olive oil
  • 1 pkg. Smithfield Smoked Sausage. cut in 1/2 -inch slices
  • 1 green pepper. cut in 1/2 -inch pieces
  • 1 yellow pepper. cut in 1/2 -inch pieces
  • 1 1/2 cups sliced zucchini
  • 1 1/2 cups grape tomatoes. cut in half
  • 1/2 teaspoon garlic powder
  • . 1/2 cup chopped fresh parsley
  • 1 teaspoon grated lemon zest
  • 1 tablespoon lemon juice
  • Salt and pepper
  • Grated Parmesan cheese. optional
  • Fresh basil leaves. optional

Preparation

Step 1

Prepare pasta according to package directions; drain and reserve 1/3 cup of cooking liquid.

Heat 2 tablespoons olive oil in a large non-stick skillet over medium-high heat; saute sausage 3 minutes or until lightly browned.

Add peppers; cook and stir 3 minutes.

Add zucchini. tomatoes and garlic powder; cook and stir 3 minutes or until zucchini is crisp-tender.

Remove from heat; stir in parsley. Place cooked and drained pasta in a large serving bowl; add sausage and vegetables. reserved pasta cooking
liquid. lemon zest and juice; toss to combine.

Season to taste with salt and pepper.

If desired. sprinkle with Parmesan cheese and
garnish with fresh basil. Makes 4-6 servings.
