Ingredients
- 3/4 cup butter
- 1 cup packed brown sugar (light or dark)
- 1 egg, at room temperature
- 1/4 cup molasses
- 2 1/4 cup flour
- 2 tsp ginger
- 2 tsp baking soda
- 1/2 tsp salt
- 1 1/2 tsp fresh ginger
- 1/4 to 1/2 cup chopped crystallized ginger
Preparation
Step 1
In a large bowl, cream together the butter and brown sugar until smooth. In a separate bowl, beat the egg and molasses. Combine the flour, ginger, baking soda and salt, and put thru a sifter or a fine mesh colander. Using a spoon, stir together molasses and egg mixture with butter and sugar. Stir in flour mixture. Stir in the fresh and crystallized ginger. Cover and refrigerate overnight (this gives a much better texture to the cookie). Preheat oven to 350 degrees. Using a 1 1/2 inch cookie scooper, shape dough into balls, roll in sugar and place 2 inches apart on an ungreased cookie sheet. Bake for 10 to 12 minutes in preheated oven until lightly brown. Cool on wire rack.
