Ingredients

- Kountry Pies, Coteau, Louisiana Yield: 1 (10-inch) pie
- 1/4 recipe Jim's Majic Pie Dough, refrigerated overnight (recipe on page 50)
- ((or store bought crust))
- 1 10-inch pie crust
- 2 cups sweetened flaked coconut
- 2 cups whole milk
- 1 cup sugar
- 3 jumbo eggs
- 1 large egg
- 1 tablespoon coconut extract
- 1/4 cup butter, melted
Preparation
Step 1
1. Preheat oven to 350°.
2. Roll out pie dough, and place in a 10-inch deep-dish pie plate. Trim and crimp dough edge. Place coconut in orepared pie plate. Set aside.
3. In the container of a blender, combine milk, sugar, eggs, and coconut extract. Blend until smooth. Add
butter. Blend for 1 minute. Immediately pour mixture over coconut in prepared pie plate.
4. Bake on bottom rack until set, 50 to 60 minutes. If the top begins to brown too much, place a tent-shaped piece of foil on top of pie.
5. Let cool completely on a wire rack.
