Barley and Roasted Veggies

Ingredients

  • 1 c barley
  • 1 head of broccoli, cut into florets
  • 2 onions, wedged
  • 1 lb cimini mushrooms, halved
  • 2 carrots cut in strips
  • 1 clove garlic, minced
  • 3 T lemon juice
  • dill

Preparation

Step 1

1) Cook barley according to package.
2) toss the veggies in 3 T of oil, oregano, and black pepper
3) Bake at 425 degrees for 25 min. Toss once.
4) Mix 1/4 c oil, garlic, lemon juice, and dill and then toss with the veggies and barly.
