Ingredients
- red wine
- chicken stock
- onion/carrot/celery/garlic
- dash balsamic
- herbs du Provence
- butter
- mushrooms
- onions
- cooked bacon, crumbled
- parsley
- poached eggs
- toast
Preparation
Step 1
Simmer/reduce wine, stock, veggies, vinegar and herbs. Strain; then add a little cornstarch slurry to thicken and a pat of butter for gloss.
Meanwhile, sautee mushrooms til dry and brown. Also, sautee onions (or caramelized onions would be good too).
Top toast w/eggs, sauce, mushrooms, onions, bacon and parsley.
