Ingredients
- 6 cups of Pastry flour (or 5 1/2 all purpose)
- 1 lb shortening
- 1 tsp salt
- 1 egg
- some cold water
- 1 tbsp vinegar
Preparation
Step 1
In a large mixing bowl mix together the flour with the salt. Cut in lard with a pastry cutter until lard is in small pieces throughout the flour. Mix with fingers until mixture is like course meal. Beat the egg in the bottom of a 1 cup measuring cup. Add vinegar to egg and beat again. Add cold water to fill cup and beat to mix thoroughly. Make a well in the flour and gradually stir liquid into the mixture. Add only enough liquid to make the dough cling together. Mix until pastry holds together, it may be sticky. Gently press dough into a ball. Roll out dough on a floured surface. If dough is sticking, chill 1 to 2 hours.
