Meatloaf Mix

Ingredients

  • 2 lb. lean ground beef
  • 1 cup bread crumbs
  • 3 T chopped fresh flat-leaf parsley
  • 1 1/2 med. onion, chopped
  • 2 med. carrots, shredded
  • 2 large eggs
  • 2 tsp. Dijon mustard
  • 2 tsp. reduced-sodium soy sauce
  • 1 1/2 tsp. kosher salt
  • 1 tsp. black pepper
  • If used in meatballs for spaghetti add 2 garlic cloves (minced) and 1 T dried oregano

Preparation

Step 1

1. In large bowl, combine all ingredients until well mixed. The mixture can be stored in an airtight container in the refrigerator for one to two days or freeze if necessary.

Muffin Tin Meatloaf:

1. Divide the mix into 12 equal portions, shape into balls and press into lightly greased muffin cups. You can also divide the mixture into 4 equal portions, shape into 4 individual loaves and place on a baking sheet with edges.

Top with a favorite barbecue sauce and bake at 400F for about 15 minutes
