Walnut Cookies

Ingredients

  • 1 cup (2 sticks) butter, softened
  • 3/4 cup confectioners' sugar
  • 2 teaspoons vanilla extract
  • 2 cups unsifted all-purpose flour
  • 1 cup finely chopped walnuts

Preparation

Step 1

In medium size bowl, with electric mixer on medium speed, beat butter, sugar and vanilla until fluffy. Reduce mixer speed to low, gradually beat in flour until well mixed. Stir in walnuts.
Divide dough in half and shape each half into an 8" long log. Wrap and refirgerate dough 1 hour or until it is firm enough to slice.
Heat oven to 325 degrees. Cut each log crosswise into 16 slices. Place 1" apart, on ungreased large baking sheets. Bake 15-20 minutes or until lightly browned. Cool 2 minutes on baking sheets, then transfer to wire racks and cool completely.
