Maple Sweet Potato Fries

Ingredients

  • 2 T. extra-virgin olive oil
  • 2 T. maple syrup
  • 1/8 t. cayenne pepper, or to taste
  • 1/4 t. ground cinnamon
  • 1 t. fine salt, or to taste
  • 1/2 t. freshly ground black pepper, or to taste
  • 1 large sweet potato (about 1 pound)

Preparation

Step 1

1. Preheat the oven to 425 degrees F. Position two racks in the center of the oven, and place a baking sheet on each rack. Allow the baking sheets to heat while the oven is preheating

2. Combine the oil, maple syrup, cayenne pepper, cinnamon, salt and pepper in a large mixing bowl; whisk to mix thoroughly.

3. Peel the potatoes, and cut them into 1/2-inch wide by 3-inch long fries. Add the cut potatoes to the spice mixture, and toss until the potatoes are evenly coated. Carefully line the preheated baking sheets with parchment paper, and arrange the potatoes in a single layer. The potatoes should not touch each other.

4. Place in the oven, and roast for 15 minutes. Use a metal spatula to carefully turn each fry over; return the baking sheet to the oven, and continue roasting until the fries are brown and crispy, about 10-15 minutes more.
