FLAPPER PIE

Ingredients

  • 20 rolled graham wafers
  • 1/2 c. sugar
  • 1/2 c. melted butter
  • 1 tsp. cinnamon
  • 2 c. milk
  • 2 egg yolks
  • 2 tbsp. cornstarch
  • 1/4 c. granulated sugar
  • 1 tsp. vanilla or fruit jam
  • 2 egg whites
  • 3 tbsp. icing sugar
  • 1 tbsp. cornstarch

Preparation

Step 1

Mix the graham crust up and line the bottom of the pan and press in.
Cook the milk yolks cornstarch, sugar and vanilla until thick and spread while hot.
Beat the egg whites stiff and beat in the icing sugar and cornstarch.
Spread the egg white over the filling.
Bake in slow oven at 250 F. for 20 minutes or until golden brown.
