  • 1/2 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon Dijon mustard
  • salt, pepper
  • 1/4 cup italian parsley -- finely chopped
  • 1 teaspoon garlic -- finely minced
  • 1 pound fresh mushrooms -- sliced
  • 2 firm avocado -- diced

Preparation

Step 1


Combine oil, vinegar, mustard, and seasonings.
Pour over vegetables.
