Ingredients
- 1/2 cup extra virgin olive oil
- 2 tablespoons red wine vinegar
- 1 tablespoon Dijon mustard
- salt, pepper
- 1/4 cup italian parsley -- finely chopped
- 1 teaspoon garlic -- finely minced
- 1 pound fresh mushrooms -- sliced
- 2 firm avocado -- diced

Pour over vegetables.
