Ingredients
- 1 3/4 cups flour
- 2 tablespoons sugar
- 2 1/2 teaspoons baking powder
- 1 well-beaten egg
- 3/4 cup milk
- 1/3 cup oil
- Sift dry ingredients into bowl, make well into center.
- Add liquid ingredients all at once.
- Stir quickly, just until dry ingredients are moistened.
- Fill greased muffin tins.
- Bake.

Variations:
BLUEBERRY: Use only 1/2 cup and add 1 cup fresh or frozen (drained well) berries.
Add sugar and flour and toss with berries before adding to batter.
CRANBERRY: Prepare batter; fill muffin tins 1/3 full. Cut 1 cup canned jellied cranberry sauce in 1/2" cubes.
Sprinkle over batter. Cover with remaining batter.
DATE: Add 1/2-3/4 cup chopped dates to batter.
CHEESE: Add 1 cup shredded cheese to batter.
