Pasta Salad

Ingredients

  • 1/4 # turkey or ham, cut into bite size pieces
  • 1/4 # provolone, cut into bite size pieces
  • small red onion, chopped
  • 1/2 red bell pepper, chopped
  • 1/2 c black olives, sliced
  • 1/4 c parsley, fresh, chopped
  • 16-24 oz noodles, short ones
  • 1/4 # parmesan cheese, shredded
  • 1/2 c evoo
  • 3 tbs red wine vinegar
  • 2 tsp crushed oregano
  • 2 tsp dijon mustard
  • 2 tsp celery seed
  • salt
  • pepper

Preparation

Step 1

Mix evoo with the last 6 ingredients and mix well. Pour over veggies, meat, and cheese. Refrigerate overnight for best blend of flavors.
