Ingredients

  • 1 pound beef, sirloin or round
  • 1/4 cup soy sauce
  • 1 teaspoon sugar
  • 2 large firm tomatoes
  • 2 large bell peppers
  • 1/2 teaspoon ginger
  • 1 clove garlic
  • 2 teaspoons cornstarch
  • 1 tablespoon soy sauce
  • salad oil

Preparation

Step 1

Freezing makes beef slice thin more easily. Slice in 1/2" wide strips as thinly as possible.
Pour 1/4 cup soy sauce and sugar over the meat and marinate for 1/2 hour.
Meanwhile, cut tomatoes and peppers into 1" cubes. Heat oil in large skillet, add garlic and ginger. After a minute, remove garlic and add bell pepper.
Saute for 3 minutes.
Add beef and liquid from marinade. Saute for 3 minutes.
Add tomatoes. Immediately blend in cornstarch and remaining 1 tablespoon soy sauce, and gently stir into entire mixture.
Cook, stirring gently, for 3 additional minutes.
Serve over fluffy rice.
