Ingredients

  • 6 pounds lean ground beef
  • salt and freshly ground pepper
  • 1 large onion, minced
  • 1 bell pepper, minced
  • 12 cloves garlic, crushed
  • 1 (28-ounce) can stewed tomatoes
  • 2 (6-ounce) cans tomato paste
  • 2 (16-ounce) cans refried beans
  • 3 tablespoons chile powder, your choice
  • 1 (32-ounce) block Velveeta cheese, cut into 1/2-inch cubes
  • 1 (12-ounce) jar Dr. Gonzo's Supermash, Scotch Bonnet Stew or Habeneromash, your choice
  • finger rolls, for serving

Preparation

Step 1

In a large saute pan over medium- high heat, brown 1 to 2 pounds of the ground beef, about 10 min-utes. Remove from the pan, and set aside in a colander to drain. Repeat until all the meat is browned, and season the drained meat with salt and pepper.
Place the ground beef, onion, bell pepper, garlic, tomatoes, tomato paste and beans in a large soup pot or a slow cooker.
Add the chile powder and Dr. Gonzo's peppermash to the pot. Stir and simmer over low heat for 2 hours on the stovetop or 6 hours in the slow cooker.
Just before serving, add the cubes of and allow the cheese to 'D'eneateilltc.11 eesc'
Spoon the dynamite mixture onto each finger roll, and serve.
