Green Beans with Mushrooms and Bacon

Ingredients

  • 2 lbs fresh tiny green beans
  • 8 bacon slices
  • 3 cups sliced shiitake mushrooms. about 7 oz
  • 1/4 cup chopped shallots
  • salt and pepper to taste

Preparation

Step 1

Cook green beans in boiling water for about 3 minutes. Drain. Plunge into ice cold water to stop the cooking process.Drain.
Cook bacon until crisp. Drain on a paper towel, reserving 2 Tbsp dripping in the skillet. Crumble the bacon.
Saute mushrooms and shallots in the hot drippings for about 5 minutes or until shallots are tender. Add green beans and saute until thoroughly heated. Stir in crumbled bacon. Season with salt and pepper.
