Ingredients
- 1/4 cup fresh lemon juice
- 1/2 tsp. salt
- 1 tsp. sugar
- 3 tsp. Dijon mustard
- 1/4 tsp. white pepper
- 2 Tbsp. chopped shallots
- 3/4 cup EVOO
- 3 Tbsp. capers
- 1 Tbsp. chopped fresh rosemary or dill
- 3 lbs. 'Red Bliss' or 'Yukon Gold' potatoes
Preparation
Step 1
1. Boil potatoes in salted water with skins on until barely knife tender.
2. Remove from heat and pour off water. Refill pan with cold water to stop potatoes from cooking further.
3. Make dressing by mixing first 6 ingredients well then whisking in olive oil in thin drizzle.
4. Chop potatoes , with skin or without, into small pieces and sprinkle with a bit of salt, the capers and rosemary.
5. toss and let sit for 10 minutes then add dressing.
