Creamy Indian Lentils and Rice

Ingredients

  • 1 tablespoon canola oil
  • 2 cups sliced onion
  • 1 cup brown rice, uncooked
  • 1 tablespoon curry powder
  • 2 teaspoons mustard seeds
  • 1 teaspoon salt
  • 1/2 teaspoon pepper
  • 4 cups water
  • 1 cup lentils
  • 1 cup cilantro
  • 1/2 cup lowfat sour cream

Preparation

Step 1

1. Saute onion in oil until golden, about 8 mins.

2. Add rice-pepper, saute 1 min. Add water and lentils, bring to a boil. Cover, reduce heat and simmer 1 hour. Take off heat, stir in cilantro and sour cream.
