Edamame and Asparagus Salad

Ingredients

  • 1 cup of asparagus tips
  • 1 cup of shelled edamame
  • Finely chopped fresh mint
  • Olive oil
  • Salt and pepper

Preparation

Step 1

Put 1 cup of asparagus tips in a pan of boiling water and boil for 2 to 3 minutes. Drain and rinse under cold water. Place asparagus and 1 cup of shelled edamame (buy them frozen and cook according to package directions) in a small salad bowl and add a small handful of finely chopped fresh mint, Pour on 3 tablespoons of olive oil and add some salt and pepper.
