Chocolate Souffle

Ingredients

  • 1/4 cup milk
  • 1/2 cup sugar
  • 3 oz butter
  • 1/4 cup flour
  • 1 egg yolk
  • 1.75 oz bittersweet chocolate, melted
  • 1 1/2 tsp cocoa powder
  • 3 egg whites

Preparation

Step 1

1. Grease souffle molds with butter and dust with sugar

2. Make sandy roux with the butter and flour.

3. Bring milk and sugar to a boil and add to the roux. Cook until smooth and cool slightly.

4. Add egg yolk and whisk. Add melted chocolate and cocoa. Cool base to room temp.

5. Whip egg whites to soft peaks and immediately fold into base.

6. bake at 375 for 20 min.

Variation:
Just prior to finishing baking, add a ganache ball to center of souffle.
