Pumpkin Squares

Ingredients

  • Base:
  • 1 box yellow cake mix (reserve 1 cup)
  • 1 egg
  • 1/2 cup melted butter
  • Filling:
  • 1 can pumpkin puree (28 oz.)
  • 2 eggs
  • 3/4 cup milk
  • 1/2 cup brown sugar
  • Topping:
  • 1 cup reserved cake mix
  • 1 teaspoon cinnamon
  • 2 tablespoons melted butter

Preparation

Step 1

Preheat oven to 350 degrees.

Base:

In a bowl combine yellow cke mix, egg and melted butter. Mix until until well combined. Pour into a greased 11 x 7 pan.

Filling:

In a bowl, combine pumpkin puree, eggs, milk and brown sugar. Mix until well combined. Pour batter over the cake mixture.

Topping:

In a bowl, combine reserved cake mix (1 cup), cinnamon, melted butter. Mix ingredients with your fingers until crumbly. Pour onto top of filling.

Bake for 40-45 minutes.
