Cookies rich in fruit may be baked two weeks early and stored to mellow in an airtight covered earthen jar or can with a tight cover.
Rick butter cookies are best when baked several days before using. To keep crisp, store in a cool place in a can with a loose cover.
May cookies be frozen?
Yes. cool cookies after baking. Place plain or frosted cookies on baking sheet in freezer and "quick-freeze" for 1 hour. Package in moisture-proof containers: coffee or shortening cans. (Separate layers of soft cookies with waxed paper.) Seal and freeze.
To thaw and serve: defrost in their original wrappings at room temperature for about 15 minutes.
Unbaked refrigerator cooky dough may be shaped into rolls, frozen and sealed. When ready to bake, slice with a sharp knife, and bake in usual manner.
