Vanilla bean ice cream

Ingredients

  • 2 vanilla beans, scraped
  • 3 cups heavy cream
  • 1 cup milk
  • 3/4 cup sugar
  • 2 egg yolks

Preparation

Step 1

1. In a heavy, medium saucepan, mix cream, milk and vanilla bean and bring to a simmer over medium heat.

2. Add the sugar and cook over medium heat, stirring, until sugar dissolves and the mixture s hot, 6 to 8 min.

3. Whisk the egg yolks in a medium bowl. Temper the egg yolks with the milk mixture and return all to saucepan.

4. Cook, stirring, until custard thickens to at least 160, coating the back of wooden spoon.

5. Strain custard into a bowl and cool over ice bath or put mixture into ice cream maker.
