Ingredients

  • 6 egg yolks, room temperature
  • 6 tbs sugar
  • 1/3 cup marsala wine
  • 1 cup heavy cream
  • 1/2 pint raspberries

Step 1

1. Whisk egg yolks and sugar in top of double boiler over simmering water, stirring constantly until mixture is thick and lemony about 5 minutes.Add marsala wine; keep whisking until mixture is thick enough to coat a metal spoon about 2 minutes, transfer to a large bowl, let cool;whisking occassionally.
2. After mixture is cool then beat heavy cream in electric mixer until stiff peaks form. Gently fold heavy cream mixture into egg mixture, cover and refrigerate 30 minutes
3. Fold in raspberries. Refrigerate overnight
4. Garnish with more raspberries if desired
