Autumn Soup

Ingredients

  • 1/2 lb ground beef
  • 1/2 cup onion -- chopped
  • 2 cups hot water
  • 3/4 cup celery -- chopped
  • 3/4 cup carrots -- chopped
  • 1 cup peeled potatoes -- cubed
  • 1 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/4 teaspoon crumbled oregano -- dried
  • 1 pinch of basil
  • 3 fresh, whole tomatoes -- chopped
  • 1/2 cup fresh green beans -- snipped, optional

Preparation

Step 1

Brown onion.

Add celery, potatoes and cook 5 minutes more.

Add ground beef and cook until browned.

Add water, carrots and seasonings.

Bring to boil, cover; then simmer 20 minutes.

Add tomatoes, green beans, if using, more water as needed; simmer 10-15 minutes longer.

Taste for seasoning and serve
with cheese toasts.
