Ingredients

  • 1 1/4 tsp flour
  • 2 tsp baking powder
  • 1/4 cup sugar
  • 1/4 tsp salt
  • 3/4 cup cornmeal
  • 2 eggs
  • 1/4 cup vegetable oil
  • 1/2 cup milk
  • 3 TB honey or maple syrup
  • 1/2 cup corn niblets
  • 1 cup grated sharp cheddar cheese
  • optional: chilis, red peppers, bacon

Preparation

Step 1

Preheat convection oven to 360. Spray baking pan with Pam.

Sift together flour, baking powder, sugar, salt and cornmeal into a mixing bowl. Set aside.

In a large mixing bowl, whisk together eggs, oil, milk and honey.

Stir dry ingredients into egg mixture until smooth. Carefully fold in corn, cheese and any optional ingredients.

Pour batter into prepared 9" pan or muffin tin. Bake 20-25 minutes or until golden brown on top. Remove from oven and allow to cool on wire rack.
