Chicken-"The Market" Chicken Salad

Ingredients

  • 1 carrot -- sliced
  • 1 ribcelery -- sliced
  • 1 pound chicken tenders or breasts
  • 4 jalapenos, canned -- seeded and chopped
  • 1/3 cup mayonnaise
  • 4 green onions -- sliced
  • 1/2 cup sour cream
  • 1 teaspoon cumin

Preparation

Step 1

Bring 4 cups water to a boil. Add the chicken, cook about 10 minutes until done.
Remove from heat, and let stand 10 minutes. Drain liquid and discard.
Chop chicken and let cool. Add remaining ingredients.

Makes 2 cups.
