Ingredients

    Tbs unsalted butter, softened

  • 8

    oz semi sweet chocolate,coarsley chopped

  • 1/2

    cup granulated sugar

  • 2

    large eggs, room temperature

  • 2

    tsps vanilla

  • 1 1/2

    cups all purpose flour

  • 1/4

    tsp salt

  • 1/2

    tsp baking powder

  • Topping: 1 cup confectioner's sugar, sifted

Directions

1.In a heatproof bowlplaced over a saucepan of simmering water, melt chocolate and butter. remove from heat and let cool to room temperature. 2.In bowl of electric mixer, beat eggs and sugar until pale, thick and fluffy about 3-5 minutes, then beat in vanilla. Add cooled chocolate mixture and beat until incorporated 3.In a separate bowl, whick together flour, salt and baking powder.Add dry ingredeints to chocolate mixture, stirring until incorporated. Cover with plastic wrap and refrigerate until firm enough to shape into balls( several hours or overnight) 4. Preheat oven to 325. Line two baking sheets with parchment 5. Placed sifted confectioner's sugar in a shallow bowl. First form chilled dough into one inch balls and then roll each ball in the sugar. Make sure eachy ball is completely coated with no chocolate showing. Place the sugar coated balls on cookie sheets about 2 inches apart 6. Bake cookies 8-10 minutes or just until the edges are slightly firm but the centers are still soft. Place ccokies on wire rack to cool 7. Store in a airtight container with waxed paper between layers
