Ingredients

  • Batter:

  • 2

    eggs at room temp

  • 2 1/4

    cups flour

  • 1 1/2

    cups sugar

  • 1 1/2

    teaspoons baking powder

  • 1

    teaspoon baking soda

  • 1/2

    teaspoon salt

  • 1

    cup ripe bananas mashed

  • 3/4

    cup buttermilk or sour milk

  • 1/2

    cup shortening (or canola oil)

  • 1

    teaspoon vanilla

  • Frosting:

  • 1/4

    cup butter

  • 3

    cups powdered sugar

  • 2

    – 5 Tablespoons milk (Just eyeball this. Keep adding until it seems like the right consistency)

  • 1

    Tablespoon vanilla

  • Mix it all up and add more milk if it’s too thick.

Directions

Allow eggs to stand at room temp. for 30 mins. Preheat oven to 350 degrees. In large mixing bowl stir together flour, sugar, baking powder, baking soda and salt. Add banana, buttermilk, shortening and vanilla. Beat with an electric mixer on low until combined. Add eggs. Mix on med. For 2 mins. Spread into pan. Bake for 30 mins. Test with toothpick. Cool and frost.
